Feast Week Day 6: The Feast of Tom Bombadil Day 2

On this sixth night of Tolkien Feast Week, the hobbits enjoyed another meal in the house of Tom Bombadil and Goldberry. Tolkien doesn’t tell us what was served that night, so we use the same ingredients as the first night in Tom’s house: “yellow cream, and honeycomb, and white bread, and butter; milk, cheese, and green herbs and ripe berries gathered.”

For my Feast Week meal, I’ve decided to bake delicious honey bread, served with honey, homemade raspberry jam, and fresh-picked raspberries.

For your honey bread, you’ll need:

  • 2 teaspoons active dry yeast
  • 1 cup barely warm water
  • 1/4 cup of honey + 1 tablespoon of honey
  • 1 teaspoon salt
  • 1 egg
  • 4 cups of flour
  • 1 tablespoon of butter, melted

In a large mixing bowl, sprinkle the yeast over the warm water and let it sit for 5 minutes. Then add the honey, salt, and egg. Stir until blended. Add 4 cups of flour and mix everything until the dough comes together. If you’re using a standing mixer, knead the dough for 5-7 minutes until the dough is elastic.

Transfer the kneaded dough to a lightly oiled bowl and cover it with plastic wrap and a clean kitchen towel. Let the dough rise in a warm area, for around two hours, until it doubled in size. Then punch the dough down and divide it into several equally sized portions and place them in a pan that was coated lightly with cooking spray. Cover everything with a kitchen towel and let it rise for another 20 minutes.

Preheat the oven to 400°F / 180°C

In a small bowl, combine the melted butter and 1 tablespoon honey and brush over the rolls. Bake for 10-15 minutes until lightly browned.

The honey bread tastes best with creamed honey or raspberry jam. Although milk has been served in Tom Bombadil’s house the previous day, I’ve enjoyed my honey bread with a nice cup of tea.
